Single Ingredient Potato Latkes

potato latkes made using only potatoes and oil to fry them in

  • grater


  • 3 baking potatoes
  • 6 tbsp frying oil avocado or refined coconut oil


  • preheat oven to 350 degrees F
  • wash and poke baking potatoes with a small knife or fork several times
  • bake potatoes for 45 minutes, should be mostly cooked but not completely
  • let cool for 15-30 minutes and then slice in half and grate on a box grater or in a food processor
  • form into latkes onto a platter or plate, cover with plastic wrap and put into the refrigerator
  • remove from the fridge 15-30 minutes before cooking
  • add oil to a pan and heat over medium heat until just barely smoking - I said 6 tablespoons, but you really need enough to cover the entire bottom of the pan up to 1/4 to 1/2 way up the potato latke when they are all in the pan
  • add latkes and cook until nicely browned, carefully flip and cook on second side until nicely browned
  • salt as desired and serve
