About an hour before you'd like to eat, take your fish out of the fridge.
Prepare your flour, eggs and panko into separate containers for your breading process.
Take each fillet and lightly dredge in flour, coat in the beaten eggs and then completely cover with panko crumbs and let sit on a wire rack for at least 15 minutes before you cook them.
Heat oven proof pan on stove and add your cooking oil of choice, I use avocado oil and butter for this recipe.
Once butter has melted and is sizzling a bit, add your fish fillets and let brown, but not burn.
Turn fillets and nicely brown the second side, no burning allowed!
Insert oven proof thermometer probe into center of one pan fried sea bass fillet, and place entire pan into pre-heated oven until thermometer reads 145.
Remove from oven and serve.
