Oven Baked Creamed Spinach

  • 48 ounces frozen spinach
  • 4 tablespoons butter
  • 2 cups heavy cream
  • 1/2 cup half and half
  • 1 cup shredded Asiago or Gruyere cheese
  • 1/2 cup shredded Parmesan cheese
  • 2 shallots
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon ground nutmeg


  • pre-heat oven to 400 degrees
  • thaw spinach by briefly running under warm water and then squeezing all of the water out
  • chop and prep remaining ingredients
  • melt butter in large pan or dutch oven over medium heat
  • add shallots and cook for a few minutes until just starting to brown
  • add cream and seasonings and stir well, cook for several minutes until cream is noticeably thicker
  • add about 1/2 of your Asiago or Gruyere cheese and stir to melt in completely
  • add all of your squeezed out spinach and mix in
  • pour spinach mixture into an oven proof casserole dish
  • sprinkle the top with remaining cheese
  • pour the half and half evenly across the spinach
  • place in the oven and bake for 30-40 minutes until the cheese is browned and bubbly
