Add yeast to your warm water and let bloom while assembling your ingredients
Add the rest of the ingredients, minus the finishing butter and salt, to the bowl of a stand mixer, hold back some of the flour and add as needed
Add the water and yeast mixture
Using a dough hook, combine until smooth and clears and bottom of the bowl
Place dough in a greased bowl, cover and let rise until about doubled, about 1.5 to 2 hours
Remove dough from dough and roll out on lightly floured counter into a rectangle about 1/3 inch thick
Using a knife or dough scraper, cut into equal sized pieces
Fold each roll over onto itself and pinch down in the middle of the side opposite the fold.
Cover the rolls and let rise until doubled again, 30-60 minutes
Preheat the oven to 400 degrees
Cook the rolls for about 15-20 minutes, or until nice and dark golden brown
Remove from oven, brush with melted butter and sprinkle flaky sea salt over each one
