Tzatziki Sauce

  • 1 English cucumber
  • 16 oz triple cream or full fat Greek yogurt
  • two sprigs mint
  • 6 sprigs dill
  • juice from one lemon
  • two garlic cloves pressed
  • 2 teaspoons sea salt
  • 1/4 pepper to season


  • seed and chop cucumber
  • using stick blender, chop cucumbers until nearly liquid, and then aggressively drain using a tea towel or cheese cloth
  • add the rest of the ingredients to your container
  • using your stick blender again, combine until smooth
