Coconut And Einkorn Flour Blueberry Muffins

Ingredients

  • 1 cup all purpose Einkorn flour
  • ½ cup coconut flour
  • ½ cup Shredded coconut
  • ½ cup Cane sugar
  • 3 teaspoons Baking powder
  • 4 Eggs
  • 1 cup Buttermilk
  • 4 tablespoons butter
  • 1 tablespoon Vanilla paste
  • 6 ounces Blueberries

Instructions

  • Pre-heat oven to 350 degrees
  • Add all of the dry ingredients to a mixing bowl
  • Add the butter tabs to the dry ingredients
  • Using your hands, rub the butter into the flour so that it becomes small pea-sized pieces
  • Add the eggs and buttermilk, and stir to combine
  • Add the blueberries and gently stir to combine
  • Scoop batter into muffin papers that have been gently sprayed with non-stick spray
  • Bake in oven for about 35-45 minutes, spinning tray once to ensure even baking
