Coconut And Einkorn Flour Blueberry Muffins

- 1 cup all purpose Einkorn flour
- ½ cup coconut flour
- ½ cup Shredded coconut
- ½ cup Cane sugar
- 3 teaspoons Baking powder
- 4 Eggs
- 1 cup Buttermilk
- 4 tablespoons butter
- 1 tablespoon Vanilla paste
- 6 ounces Blueberries
Pre-heat oven to 350 degrees
Add all of the dry ingredients to a mixing bowl
Add the butter tabs to the dry ingredients
Using your hands, rub the butter into the flour so that it becomes small pea-sized pieces
Add the eggs and buttermilk, and stir to combine
Add the blueberries and gently stir to combine
Scoop batter into muffin papers that have been gently sprayed with non-stick spray
Bake in oven for about 35-45 minutes, spinning tray once to ensure even baking
