Oven Roasted Beets

  • 2 lbs loose beets
  • 2 tablespoons olive oil
  • salt
  • pepper


  • Pre-heat your oven to 400 degrees
  • Trim both ends of each beet, and then peel using a vegetable peeler
  • Cube beets into small chunks, about an inch square
  • In a bowl, mix beets with olive oil and season with salt and pepper
  • Place your oiled beets onto a baking tray lined with parchment paper
  • Roast in your pre-heated oven for about an hour
  • Serve warm
