Oven Roasted Beets

- 2 lbs loose beets
- 2 tablespoons olive oil
- salt
- pepper
Pre-heat your oven to 400 degrees
Trim both ends of each beet, and then peel using a vegetable peeler
Cube beets into small chunks, about an inch square
In a bowl, mix beets with olive oil and season with salt and pepper
Place your oiled beets onto a baking tray lined with parchment paper
Roast in your pre-heated oven for about an hour
Serve warm
