Tomato Cucumber Salad

Ingredients

  • 2 pints cherry tomatoes
  • 3 large cucumbers
  • 1 container goat cheese crumbs 6-8 oz
  • 1/2 cup chopped olives
  • 1 shallot
  • 1 bunch parsley chopped
  • 3 tablespoons olive oil
  • 1 tablespoon red wine vinegar
  • 2 teaspoons sea salt
  • 1/2 teaspoon pepper

Instructions

  • Halve or quarter all of your tomatoes
  • Peel (if you want to) the cucumber and roughly chop
  • Chop the olives, parsley and shallot
  • Combine tomatoes, cucumber, olives, goat cheese, parsley and shallot in a medium or large bowl
  • Add olive oil, vinegar, salt and pepper and stir to combine
