Firing up the grill can be a lot of fun, and messing with the vents to keep the flames and embers just right so you can smoke a Boston Butt can really be addictive. But sometimes I prefer the simpler way out… like cooking a Boston Butt in the oven!
I taught myself this recipe years ago after asking my kids if they would be interested in trying pulled pork at home. One kid said yes, the other said no. But after asking a few follow up questions, I became pretty convinced that my daughter’s “no” was more from never having eaten good pulled pork or Boston Butt as opposed to actually not liking the dish.
Her exposure to pulled pork was fairly limited and was almost always accompanied by way too much sauce. So I decided to go with a mild rub, minimal sauce, if any, and see if she wasn’t a bit more receptive to an oven baked pulled pork.
And guess what… she’s a huge fan now. Still doesn’t like Sate Fair pulled pork buried under commercial barbeque sauce so much, but it is now hard for me to cook an oven baked pulled pork too often in our house.
As an added bonus, it adds almost zero time to grab a pork shoulder that is significantly too large for one meal, to prepare for leftovers later in the week. While my kids were school aged and packed their own lunches for middle and high school, pulled pork was always one of the most desirable lunch meats to have on hand.
